  • 4 ripe tomatoes (about 1 pound), chopped
  • 1 red bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 large eggs
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tbsp olive oil
  • Fresh parsley or cilantro for garnish

Instructions
