  • 2 carrots (chopped)
  • 2 celery stalks (chopped)

  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent.
  2. Add minced garlic, chopped carrots, and celery; stir until softened.
  3. Pour in the rinsed split peas and vegetable broth; bring to a boil.
  4. Add bay leaves and thyme, then reduce heat. Simmer uncovered for about 45 minutes, until peas are tender.
  5. Blend the soup for creaminess using an immersion blender or transfer batches to a regular blender.
  6. Taste and adjust seasoning with salt and pepper before serving hot.
