  • 1 pound boneless skinless chicken breast
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 cup shredded cheese (cheddar and mozzarella mix)
  • 2 green onions (for garnish)
  • Olive oil, salt, and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat and cook chicken until golden brown, about 6-8 minutes per side. Shred the chicken once cooked.
  4. In a bowl, mix shredded chicken with buffalo sauce and ranch dressing until evenly coated.
  5. Stuff each pepper with the buffalo chicken mixture and top with shredded cheese.
  6. Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
  7. Let cool slightly before garnishing with chopped green onions.
