Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet, heat olive oil over medium heat and cook chicken until golden brown, about 6-8 minutes per side. Shred the chicken once cooked.
- In a bowl, mix shredded chicken with buffalo sauce and ranch dressing until evenly coated.
- Stuff each pepper with the buffalo chicken mixture and top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
- Let cool slightly before garnishing with chopped green onions.
