  • 4 large eggs, separated
  • 100g granulated sugar
  • 300ml heavy cream

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water until smooth; remove from heat.
  3. In another bowl, whisk egg yolks and sugar until pale; add melted chocolate while stirring continuously.
  4. Beat egg whites in a clean bowl until soft peaks form, then gently fold into the chocolate mixture.
  5. Whip heavy cream until soft peaks form and fold into the chocolate mixture until combined.
  6. Pour into prepared pan and refrigerate for at least four hours or overnight before serving.
