  • 1 lb fresh carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute.
  3. Add chopped carrots and sauté for an additional 5 minutes.
  4. Pour in the vegetable broth, cumin, and coriander; bring to a boil. Reduce heat and simmer for 20 minutes until carrots are tender.
  5. Blend the soup using an immersion blender until smooth. Alternatively, blend in batches in a standard blender.
  6. Stir in coconut milk; season with salt and pepper to taste. Heat gently before serving.
