Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 medium carrots (chopped)
  • 2 celery stalks (chopped)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream (optional)

Instructions

  1. Chop carrots, celery, onion, and garlic into bite-sized pieces.
  2. In a pan over medium heat, sauté onions and garlic until fragrant (about 3 minutes).
  3. Transfer chopped chicken, rice, vegetables, thyme, pepper, and broth into the crockpot; stir gently.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. If using cream, stir it in about 30 minutes before serving.
