  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 16 oz fresh gnocchi
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Fresh thyme leaves (to taste)
  • Black pepper (to taste)

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove bacon but keep rendered fat.
  2. Sauté diced onion in the bacon fat until translucent. Add minced garlic and cook until fragrant.
  3. Pour in chicken broth and bring to a simmer; add gnocchi and cook according to package instructions (about 2-3 minutes).
  4. Reduce heat to low; gradually stir in heavy cream followed by shredded cheddar cheese until melted.
  5. Return crispy bacon to the pot along with fresh thyme and black pepper. Let simmer briefly before serving.
