  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups carrots, chopped (about 3 medium)
  • 2 cups celery stalks, chopped (about 2 large)
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 lb store-bought gnocchi
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste

Instructions

  1. Chop chicken breasts into bite-sized pieces.
  2. In a pan over medium heat, sauté garlic until fragrant.
  3. In a crockpot, combine chicken, carrots, celery, sautéed garlic, broth, thyme, oregano, salt, and pepper; stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, stir in softened cream cheese until smooth.
  6. Add gnocchi and spinach (or kale) about 30 minutes before serving; let heat through.
