  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 bay leaf
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and carrots until soft (about 5 minutes).
  3. Add minced garlic, cumin, and paprika; stir for about 30 seconds until fragrant.
  4. Incorporate rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and let simmer uncovered for 30-35 minutes until lentils are tender but not mushy.
  6. Season with salt and pepper; add fresh herbs if desired before serving.
