- 1 bay leaf

Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook for another minute.
- Add chopped carrots and celery; sauté until softened (approximately 5-7 minutes).
- Stir in rinsed lentils, cumin, thyme, salt, and pepper until well combined.
- Pour in vegetable broth and add diced tomatoes with their juices. Bring to a gentle boil then reduce heat to low.
- Cover the pot and simmer for about 30-35 minutes or until lentils are tender but not mushy. Stir occasionally.
