- 1/2 cup unsalted butter (1 stick)

Instructions
- Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes.
- Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
- Squeeze the roasted garlic into the hot potatoes. Add softened butter and gradually mix in heavy cream until desired consistency is reached.
- Season with salt and pepper to taste. Serve warm, garnished with chives or parsley if desired.
