  • 8 oz fettuccine pasta
  • 1 lb large shrimp (peeled and deveined)
  • 4 cloves fresh garlic (minced)
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente, according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season shrimp with salt and pepper, then sauté until pink and opaque, about 3-4 minutes per side. Remove from skillet.
  3. In the same skillet, add minced garlic and sauté until fragrant (30 seconds). Add lemon juice and zest; stir well.
  4. Lower the heat, pour in heavy cream, and simmer for 3-5 minutes until slightly thickened. Stir in Parmesan cheese until melted.
  5. Return shrimp to the skillet along with cooked fettuccine; toss gently to coat evenly.
  6. Garnish with chopped parsley before serving hot, with extra lemon wedges on the side.
