  • 1 cup fresh pumpkin puree (homemade or canned)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 5 fresh sage leaves, chopped

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until translucent (5 minutes).
  2. Stir in minced garlic and Arborio rice, cooking until rice edges are slightly translucent (about 2 minutes).
  3. Mix in pumpkin puree until all rice grains are coated.
  4. Gradually add warm vegetable broth one ladle at a time, stirring constantly until most liquid is absorbed before adding more.
  5. Once rice is al dente (18-20 minutes), remove from heat and stir in Parmesan cheese and chopped sage.
