  • 8 oz fettuccine pasta
  • 1 lb fresh salmon fillets
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried)
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Season salmon fillets with salt and pepper, cook skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes. Remove from skillet and set aside.
  3. Add minced garlic to the same skillet and sauté for 30 seconds. Pour in heavy cream and bring to a simmer.
  4. Stir in lemon zest, dill, and Parmesan cheese; simmer for about 3 minutes until slightly thickened.
  5. Flake salmon into bite-sized pieces and return to the skillet. Toss with drained fettuccine; add reserved pasta water for desired consistency.
  6. Serve warm, garnished with extra dill or Parmesan if desired.
