  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh or frozen peas
  • 4 cups vegetable broth (homemade or store-bought)
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp butter
  • 2 tbsp extra virgin olive oil
  • Zest of 1 lemon
  • Salt to taste

Instructions

  1. In a large skillet over medium heat, melt the butter with olive oil. Add the chopped onion and minced garlic; sauté until fragrant and translucent.
  2. Stir in the Arborio rice and toast for about 2 minutes until slightly translucent around the edges.
  3. Gradually add warm vegetable broth one ladle at a time, stirring continuously until most is absorbed before adding more. This process will take about 18–20 minutes.
  4. When the rice is nearly al dente, stir in the shrimp and peas. Cook until the shrimp turns pink and the peas are tender—about 5 minutes.
  5. Remove from heat and mix in grated Parmesan cheese and lemon zest. Season with salt to taste.
  6. Serve immediately in bowls, garnishing with extra cheese or herbs if desired.
