- 2 tbsp butter
- 2 tbsp extra virgin olive oil

Instructions

- Gradually add warm vegetable broth one ladle at a time, stirring continuously until most is absorbed before adding more. This process will take about 18–20 minutes.
- When the rice is nearly al dente, stir in the shrimp and peas. Cook until the shrimp turns pink and the peas are tender—about 5 minutes.
- Remove from heat and mix in grated Parmesan cheese and lemon zest. Season with salt to taste.
