Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, ricotta cheese, breadcrumbs, eggs, minced garlic, Italian seasoning, salt, and pepper until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. While meatballs bake, melt butter in a saucepan over medium heat and sauté minced garlic until fragrant.
  6. Gradually add heavy cream while stirring; bring to a simmer.
  7. Stir in grated Parmesan cheese and wilt fresh spinach for about 3-4 minutes.
  8. Once meatballs are done, transfer them to the sauce and gently toss to coat.
