- 2 tbsp freshly squeezed lime juice

Instructions
- Gather all ingredients and fill a shallow dish with warm water.
- Soak one rice paper wrapper in warm water for about 10–15 seconds until soft. Lay flat on a clean surface.
- In the center of the wrapper, arrange a small amount of shredded carrots, bell peppers, cucumbers, cilantro, and mint.
- Fold the sides of the rice paper towards the center and roll from the bottom upwards to form a snug roll.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, and a splash of water until smooth.
