Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup sliced cucumbers
  • ½ cup fresh cilantro leaves
  • ½ cup fresh mint leaves
  • ½ cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp sesame oil
  • Water for soaking

Instructions

  1. Gather all ingredients and fill a shallow dish with warm water.
  2. Soak one rice paper wrapper in warm water for about 10–15 seconds until soft. Lay flat on a clean surface.
  3. In the center of the wrapper, arrange a small amount of shredded carrots, bell peppers, cucumbers, cilantro, and mint.
  4. Fold the sides of the rice paper towards the center and roll from the bottom upwards to form a snug roll.
  5. In a bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, and a splash of water until smooth.
  6. Serve rolls whole or sliced in half with the peanut sauce on the side.
