Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 1 medium avocado, diced
  • Β½ cup fresh parsley, chopped
  • ΒΌ cup fresh chives, chopped
  • 2 green onions, sliced
  • 2 tbsp lemon juice (freshly squeezed)
  • Β½ cup Greek yogurt
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse the romaine lettuce under cold water and pat dry.
  2. Dice the cucumber and avocado into bite-sized pieces. Chop the parsley and chives.
  3. In a bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, pepper, and chopped herbs until smooth.
  4. In a large bowl, combine chopped romaine, cucumber, avocado, and green onions. Drizzle half of the dressing over the salad.
  5. Toss gently to combine and adjust seasoning if needed.
  6. Serve immediately with additional dressing if desired.
