			- 4 cups romaine lettuce, chopped
 - 1 cup cucumber, diced
 - 1 medium avocado, diced
 - ½ cup fresh parsley, chopped
 - ¼ cup fresh chives, chopped
 - 2 green onions, sliced
 - 2 tbsp lemon juice (freshly squeezed)
 - ½ cup Greek yogurt
 - 2 tbsp olive oil
 - Salt & pepper to taste
 
Instructions
- Rinse the romaine lettuce under cold water and pat dry.
 - Dice the cucumber and avocado into bite-sized pieces. Chop the parsley and chives.
 - In a bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, pepper, and chopped herbs until smooth.
 - In a large bowl, combine chopped romaine, cucumber, avocado, and green onions. Drizzle half of the dressing over the salad.
 - Toss gently to combine and adjust seasoning if needed.
 - Serve immediately with additional dressing if desired.
