  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 4 cups fresh romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 4 large flour tortillas (10-inch)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush chicken breasts with olive oil and season with salt and pepper.
  3. Grill chicken for 6-7 minutes per side until cooked through (internal temp of 165°F).
  4. While chicken cooks, wash and chop romaine lettuce.
  5. In a bowl, mix chopped lettuce with Caesar dressing and Parmesan cheese until well coated.
  6. Slice grilled chicken into strips after resting for a few minutes.
  7. Lay tortillas flat, layer dressed lettuce and sliced chicken on top, roll tightly, and slice in half.
