  • 8 tostada shells
  • 2 ripe avocados
  • 1 cup fresh tomatoes (diced)
  • 1/2 cup fresh cilantro (chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper (to taste)

Instructions

  1. Marinate the shrimp: Combine shrimp with olive oil, lime juice, garlic powder, cumin, salt, and pepper in a bowl. Let marinate for 15-30 minutes.
  2. Prepare guacamole: Mash avocados in a bowl until smooth but chunky. Mix in lime juice, chopped cilantro, and salt.
  3. Create pico de gallo: Mix diced tomatoes, minced onion, chopped cilantro, lime juice, and salt in a separate bowl.
  4. Grill the shrimp: Preheat grill to medium-high heat. Skewer marinated shrimp and grill for 2-3 minutes per side until pink and opaque.
  5. Assemble the tostadas: Spread guacamole on each tostada shell, top with grilled shrimp and pico de gallo.
