- 3–4 lbs beef chuck roast
- 1 bottle Guinness stout
- 4 large carrots, chopped
- 2 yellow onions, diced
- 4 garlic cloves, minced
- 4 cups low-sodium beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 large potatoes, cubed
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides, about 5 minutes per batch. Remove beef and set aside.
- In the same pot, sautΓ© onions and garlic until onions are translucent.
- Deglaze the pot with Guinness stout, scraping up any brown bits.
- Add carrots, potatoes, thyme, bay leaves, and beef broth; bring to a gentle simmer.
- Cover and cook on low heat for 2-3 hours until the meat is fork-tender.
- Remove bay leaves before serving. Enjoy with crusty bread or mashed potatoes.
