Instructions
- Wash and chop the spinach and herbs.
- Heat olive oil in an oven-safe skillet over medium heat. Add diced onions and sauté until golden brown.
- In a bowl, whisk together eggs with salt and pepper until combined. Pour over sautéed onions in the skillet.
