Ingredients
Scale
- 1 cup brown or green lentils
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, thinly sliced
- 1 bell pepper (any color), diced
- ¼ cup fresh dill, chopped
- Juice of 1 lemon (about 2 tablespoons)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water until the water runs clear. In a medium pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
- While the lentils cook, chop cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces.
- In a small bowl, whisk together olive oil, lemon juice, chopped dill, salt, and pepper until well combined.
- Once lentils are cooked and slightly cooled, toss them in a large mixing bowl with the prepared vegetables. Drizzle over the dill sauce and mix until everything is evenly coated.
- Let the salad sit for at least 10 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.
