  • 8 oz spaghetti or penne pasta
  • 2 medium zucchinis, diced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a boil. Cook pasta according to package instructions until al dente. Drain and reserve ½ cup of pasta water.
  2. Sauté vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and diced zucchini; sauté for 4-5 minutes until zucchini is tender.
  3. Add tomatoes: Stir in halved cherry tomatoes and cook for an additional 3-4 minutes until they burst open.
  4. Combine: Add the drained pasta and reserved pasta water to the skillet, tossing everything together over medium heat.
  5. Finish: Off the heat, mix in Parmesan cheese and torn basil leaves. Season with salt and pepper to taste.
  6. Serve: Plate hot, garnished with extra cheese if desired.
