Instructions
- Preheat oven to 300°F (150°C) and prepare baking sheets lined with parchment paper.
- Sift together almond flour and icing sugar twice; set aside.
- In a separate bowl, beat egg whites until foamy; gradually add granulated sugar until glossy peaks form.
- Gently fold the dry mixture into whipped egg whites along with vanilla, peppermint extracts, and green food coloring until well combined.
- Transfer batter into piping bags fitted with round tips; pipe small circles onto prepared sheets about 1 inch apart.
- Bake for 15-20 minutes or until shells develop a hard exterior.
- While cooling, beat softened butter with icing sugar, adding vanilla and peppermint extracts to taste for the filling.
- Once shells are cool, pair similar-sized ones together with filling in between.
