  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (mixed colors), diced
  • 1/4 cup red onion, finely chopped
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and rinse under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, bell peppers, and onion.
  3. In a bowl, whisk together olive oil, lime juice, garlic powder, salt, and pepper for the dressing.
  4. In a large bowl, combine the cooled pasta with chopped veggies and black beans. Drizzle with dressing and toss to coat evenly.
  5. Gently mix in shredded cheddar cheese. Cover and chill in the refrigerator for at least 30 minutes before serving.
