  • 4 boneless, skinless chicken breasts
  • 1 ripe mango, diced
  • 1 cup fresh pineapple chunks
  • 2 tbsp fresh lime juice
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine diced mango, pineapple chunks, minced garlic, lime juice, olive oil, and honey. Mix well.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over chicken. Seal tightly and refrigerate for at least 1 hour.
  3. Preheat grill to medium-high heat (375°F/190°C) and grease grates lightly with oil.
  4. Remove chicken from marinade and place on grill. Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (74°C) and juices run clear.
  5. Optionally brush reserved marinade over chicken in the last few minutes of cooking.
  6. Let the chicken rest for 5 minutes before slicing and serving.
