Ingredients

  • 1 ¾ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • 1 tsp red gel food coloring
  • 1 cup buttercream filling (flavored as desired)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form.
  3. Sift together almond flour and powdered sugar in another bowl.
  4. Gently fold the dry ingredients into the meringue; add red gel food coloring until the desired shade is reached.
  5. Pipe circles onto prepared sheets, leaving space between each cookie, then tap trays to release air bubbles.
  6. Bake for 15-20 minutes until cookies lift easily from parchment; cool completely before filling with buttercream.
  7. Sandwich two macaron shells with the buttercream filling and refrigerate for at least 24 hours before serving.
