  • 200g rice noodles
  • 1 cup sliced bell peppers
  • 1 cup matchstick carrots
  • 1 cup sliced cucumbers
  • 150g grilled chicken, shrimp, or tofu (your choice)
  • ¼ cup fresh basil leaves
  • ¼ cup fresh mint leaves
  • 2 tbsp freshly squeezed lime juice
  • 2 cloves minced garlic
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey or agave syrup

Instructions

  1. Prepare the noodles by boiling water in a large pot. Cook rice noodles according to package instructions until al dente, then drain and rinse under cold water.
  2. While the noodles cool, chop bell peppers, cucumbers, and carrots into uniform pieces.
  3. Cook your chosen protein (grill chicken/shrimp or pan-fry tofu until golden).
  4. In a small bowl, whisk together lime juice, minced garlic, soy sauce, and honey until smooth.
