Description

Creamy Irish Colcannon is a rich, comforting dish that combines buttery mashed potatoes with vibrant greens, perfect for cozy family dinners or festive gatherings.


Ingredients

  • 2 pounds starchy potatoes (Russets or Yukon Gold)
  • 1 cup chopped green cabbage
  • 3 tablespoons unsalted butter
  • ½ cup whole milk or heavy cream
  • ¼ cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Peel and cut the potatoes into even chunks.
  2. Boil the potato chunks in salted water for 15-20 minutes until fork-tender.
  3. In a skillet, melt butter and sauté the chopped cabbage for about 5 minutes until softened.
  4. Drain the boiled potatoes, return them to the pot, and mash with sautéed cabbage and milk/cream until smooth.
  5. Stir in green onions and season with salt and pepper. Adjust seasoning as needed.
  6. Serve warm, drizzled with melted butter if desired.
