Ingredients
- Good quality sausages (pork or chicken)
- Starchy potatoes (Russets or Yukon Golds)
- Butter
- Milk or cream
- Sweet onions
- Beef or vegetable broth
- All-purpose flour
- Salt & pepper
Instructions
- Peel and chop the potatoes into chunks. Finely chop the onions for the gravy.
- In a large skillet, brown the sausages over medium heat for 12–15 minutes. Remove from the pan.
- In the same skillet, sauté chopped onions until translucent, about 5 minutes.
- Sprinkle flour over cooked onions; stir and gradually whisk in broth until smooth. Simmer until thickened, about 3–5 minutes.
- Boil potato chunks in salted water until fork-tender, around 15–20 minutes. Drain well.
- Return the drained potatoes to the pot, add butter and milk (or cream), and mash until creamy, seasoning with salt and pepper.
- Serve sausages over mashed potatoes, generously topped with onion gravy.
