Ingredients

  • Good quality sausages (pork or chicken)
  • Starchy potatoes (Russets or Yukon Golds)
  • Butter
  • Milk or cream
  • Sweet onions
  • Beef or vegetable broth
  • All-purpose flour
  • Salt & pepper

Instructions

  1. Peel and chop the potatoes into chunks. Finely chop the onions for the gravy.
  2. In a large skillet, brown the sausages over medium heat for 12–15 minutes. Remove from the pan.
  3. In the same skillet, sauté chopped onions until translucent, about 5 minutes.
  4. Sprinkle flour over cooked onions; stir and gradually whisk in broth until smooth. Simmer until thickened, about 3–5 minutes.
  5. Boil potato chunks in salted water until fork-tender, around 15–20 minutes. Drain well.
  6. Return the drained potatoes to the pot, add butter and milk (or cream), and mash until creamy, seasoning with salt and pepper.
  7. Serve sausages over mashed potatoes, generously topped with onion gravy.
