Enjoy a slice of this warm, buttery blueberry buckle—an irresistible combination of fluffy cake, juicy blueberries, and a crunchy streusel topping perfect for any occasion.

Ingredients

Scale
  • 2 cups fresh blueberries
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup whole milk
  • 1 tsp cinnamon (optional)
  • ½ cup sour cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, beat softened butter and sugar until light and fluffy (3-5 minutes).
  4. Beat in eggs one at a time, followed by milk until smooth.
  5. Gradually fold in the dry mixture until just combined; gently add blueberries.
  6. For the streusel topping, mix together flour, sugar, and cold butter chunks until crumbly.
  7. Spread batter into the prepared pan and sprinkle topping generously over it.
  8. Bake for 45-50 minutes or until golden brown and a toothpick inserted comes out clean.
