Description

One-Pot Teriyaki Noodles are a quick and flavorful dish that combines tender noodles and vibrant vegetables in a savory sauce, perfect for busy weeknights or casual gatherings.

Ingredients

  • Spaghetti noodles (whole wheat or gluten-free)
  • Fresh vegetables (bell peppers, snap peas)
  • Low-sodium soy sauce
  • Honey (or maple syrup for a vegan option)
  • Minced garlic
  • Freshly grated ginger
  • Cornstarch
  • Sesame oil
  • Green onions (for garnish)

Instructions

  1. Prepare ingredients by chopping vegetables into bite-sized pieces.
  2. In a large pot over medium heat, drizzle sesame oil and sauté minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add chopped vegetables and stir-fry for 3-4 minutes until bright and tender.
  4. Pour in soy sauce mixed with honey and cornstarch, then add uncooked spaghetti noodles; stir well to combine.
  5. Add enough water to cover the mixture by an inch; bring to a boil while stirring occasionally to prevent sticking.
  6. Once boiling, cover the pot, reduce heat to medium-low, and cook until noodles are al dente (approximately 10 minutes).
  7. Toss thoroughly before serving and garnish with sliced green onions.
