- 2 small pumpkins (about 1 lb each)
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup Italian sausage or pepperoni, diced
- 1/2 cup bell peppers, diced (any color)
- 1/4 cup onions, diced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Wash pumpkins, cut off the tops, and scoop out seeds.
- In a bowl, mix pizza sauce, mozzarella, sausage or pepperoni, bell peppers, onions, oregano, and basil until combined.
- Fill each pumpkin with the mixture and replace the tops.
- Place in a baking dish, drizzle with olive oil, and bake for 30-35 minutes until tender.
