  • 4 boneless, skinless chicken breasts
  • 1 cup fresh parsley, finely chopped
  • 4 garlic cloves, minced
  • 3 tbsp red wine vinegar
  • ½ cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • 3 garlic cloves, minced
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by mixing parsley, minced garlic, red wine vinegar, and olive oil in a bowl.
  2. Marinate chicken breasts in half of the chimichurri sauce for at least 30 minutes or overnight.
  3. Preheat your grill to 400°F (200°C).
  4. Grill the marinated chicken for 6-7 minutes on each side until cooked through (165°F internal temp).
  5. While grilling, mix mayonnaise, minced garlic, lemon zest, salt, and pepper in a bowl for the garlic sauce.
  6. Slice grilled chicken and assemble bowls with greens or rice; drizzle with chimichurri and garlic sauce.
