- 2 tbsp taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup fresh bell peppers, chopped
- 1 cup corn kernels (fresh or frozen)
- 2 cups cooked rice (white or brown)
- ½ cup salsa
- ½ cup sour cream or Greek yogurt
- 1 avocado, sliced

Instructions
- Preheat a skillet over medium-high heat. Season the chicken breasts with taco seasoning.
- Drizzle olive oil into the hot skillet and add the chicken. Cook for about 6-7 minutes per side until golden brown.
