  • 2 tbsp fresh lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 cup fresh cilantro, chopped
  • Salsa of choice (to taste)

Instructions

  1. 1. Cook brown rice according to package instructions (about 40-45 minutes). Fluff with a fork once done.
  2. 2. In a pan over medium heat, sauté chopped bell peppers until softened (5-7 minutes).
  3. 3. Drain and rinse black beans; add to the pan along with corn. Stir and heat through for about 5 minutes.
  4. 4. Sprinkle in cumin, chili powder, and garlic powder; cook for another 1-2 minutes until fragrant.
  5. 5. Remove from heat, squeeze fresh lime juice over the mixture, and stir in chopped cilantro.
  6. 6. To assemble, start with brown rice as the base, then layer the black bean mixture, diced avocado, and salsa.
