  • 4 cod fillets (about 1 pound)
  • 3 tbsp tikka masala paste
  • 2 medium sweet onions, thinly sliced
  • 1 cup basmati rice
  • 2 cups water
  • 2 tbsp olive oil
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Juice of ½ lemon

Instructions

  1. Prepare your ingredients: Rinse cod fillets under cold water and pat dry. Thinly slice onions.
  2. Cook the onions: In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until golden brown and caramelized (10-15 minutes).
  3. Add tikka masala paste: Push onions aside in the skillet and place cod fillets on the pan. Spread tikka masala paste over the fish and cook for 5-6 minutes until opaque.
  4. Cook the rice: Rinse basmati rice until water runs clear. In a separate pot, combine rice with 2 cups water and a pinch of salt; bring to a boil, then reduce heat to low and simmer for 15 minutes.
  5. Combine the dish: Once rice is fluffy, gently fold it into the skillet with cod and onions. Squeeze lemon juice over everything before serving.
  6. Garnish & serve: Plate your Tikka Cod with fresh cilantro sprinkled on top.
