  • 4 boneless, skinless chicken thighs
  • 1 yellow onion, diced
  • 2 fresh carrots, sliced
  • 1 cup button or cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tablespoons Dijon mustard
  • Fresh herbs (thyme or rosemary)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. Season the chicken thighs with salt and pepper on both sides.
  3. In a skillet over medium heat, sauté the diced onion, sliced carrots, and mushrooms in olive oil until softened (about 5 minutes). Add minced garlic during the last minute.
  4. In a separate bowl, whisk together heavy cream, chicken broth, Dijon mustard, and desired herbs until smooth.
  5. Layer the sautéed vegetables in the greased baking dish. Place seasoned chicken on top and pour the sauce evenly over it all.
  6. Cover with foil and bake for about 45 minutes. Remove the foil and bake for an additional 10 minutes until golden brown.
