- 4 boneless, skinless chicken thighs
- 1 yellow onion, diced
- 2 fresh carrots, sliced
- 1 cup button or cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tablespoons Dijon mustard
- Fresh herbs (thyme or rosemary)
Instructions
- Preheat the oven to 375°F (190°C) and grease a large baking dish.
- Season the chicken thighs with salt and pepper on both sides.
- In a skillet over medium heat, sauté the diced onion, sliced carrots, and mushrooms in olive oil until softened (about 5 minutes). Add minced garlic during the last minute.
- In a separate bowl, whisk together heavy cream, chicken broth, Dijon mustard, and desired herbs until smooth.
- Layer the sautéed vegetables in the greased baking dish. Place seasoned chicken on top and pour the sauce evenly over it all.
- Cover with foil and bake for about 45 minutes. Remove the foil and bake for an additional 10 minutes until golden brown.
