  • 4 large eggs
  • 2 cups milk
  • 1/4 tsp salt
  • 1 cup strong brewed espresso, cooled
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tsp vanilla extract
  • Cocoa powder for dusting

Instructions

  1. In a bowl, whisk together flour, eggs, milk, and salt until smooth. Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat. Cook until golden brown on both sides; repeat until batter is finished.
  2. Brew the espresso and let it cool slightly.
  3. In another bowl, mix mascarpone cheese with sugar and vanilla extract. Whip the heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.
  4. Layer the cake: place one crepe on a serving plate, brush it with cooled espresso, and spread a layer of mascarpone filling on top. Repeat with remaining crepes and filling, finishing with a layer of mascarpone.
  5. Refrigerate for at least four hours or overnight before serving. Dust cocoa powder on top before slicing.
