  • 1 cup pumpkin puree (canned or roasted)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1 cup brewed coffee (strong)
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, mix pumpkin puree, eggs, sugar, vegetable oil, coffee, and vanilla until smooth.
  4. Gradually fold the dry mixture into the wet mixture without overmixing.
  5. Divide batter between prepared pans and smooth tops.
  6. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
