  • 2 tbsp lemon juice, fresh-squeezed

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs with melted butter and ¼ cup sugar. Press firmly into the bottom of a springform pan.

  3. 3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and mix until fluffy.
  4. 4. Add sour cream, vanilla extract, lemon juice, and eggs one at a time; blend until just combined.
  5. 5. Pour filling over cooled crust and bake for 50-60 minutes until edges are set but center jiggles slightly.
  6. 6. Turn off the oven and crack the door open; allow cheesecake to cool gradually before refrigerating for at least 4 hours or overnight.
