- 1/4 cup granulated sugar
- 1/4 tsp salt
- 6–8 tbsp cold water
- 3 cups tart apples (like Granny Smith), peeled and thinly sliced
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1 egg + 1 tbsp water (for egg wash)
Instructions
- In a large bowl, mix flour, sugar, and salt. Cut in chilled butter until crumbly. Gradually add cold water until combined. Form into a ball, wrap in plastic, and refrigerate for at least 30 minutes.
- Toss apple slices with sugar, cinnamon, and lemon juice; let sit to release juices.
- Divide dough in half. Roll out one half on a floured surface to about 1/8 inch thick. Cut out circles (4-5 inches wide).
- Place spoonfuls of filling on half of each circle. Fold over and seal edges with a fork.
- Preheat oven to 400°F (200°C). Arrange on parchment-lined baking sheets, brush with egg wash, and bake for 20-25 minutes until golden brown.
