  • 4 chicken legs (bone-in, skin-on)
  • 1 cup long-grain white rice
  • 2 cloves garlic (minced)
  • 1 medium yellow onion (chopped)
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken legs dry and season with salt, pepper, and paprika.
  3. In a skillet over medium-high heat, heat olive oil and sear chicken legs until golden brown, about 4-5 minutes per side.
  4. Remove chicken and add chopped onion and minced garlic to the skillet; sauté until fragrant.
  5. Stir in rinsed rice to coat with juices.
  6. Pour in chicken broth and nestle the seared chicken on top.
  7. Cover tightly with aluminum foil and bake for 35-40 minutes. Remove foil during the last 10 minutes for crispier skin.
