  • 1 cup dried brown lentils
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • 2 tsp dried oregano
  • ½ cup panko breadcrumbs
  • 2 large eggs
  • Zest of 1 lemon
  • 1 cup Greek yogurt
  • ½ cucumber, grated
  • 1 tbsp fresh dill

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking sheet.
  2. Sauté onion and garlic in a skillet over medium heat until translucent (about 5 minutes).
  3. In a large bowl, combine cooked lentils, sautéed onions, parsley, oregano, panko breadcrumbs, eggs, and lemon zest. Mix well.
  4. Shape the mixture into balls about one inch in diameter and place them on the baking sheet.
  5. Bake for 25–30 minutes or until golden brown.
  6. For the tzatziki sauce, mix Greek yogurt with grated cucumber and dill; serve alongside the meatballs.
