  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, cut into large chunks
  • 1 medium zucchini, sliced into rounds
  • 8 wooden kabob skewers (soaked in water)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder

Instructions

  1. Chop bell peppers, zucchini, and onion into skewering-friendly pieces.
  2. In a bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, and garlic powder. Marinate the chicken breasts in this mixture for at least 30 minutes.
  3. Thread marinated chicken and vegetables onto skewers alternately.
  4. Preheat grill to medium-high heat and grill skewers for about 10-12 minutes until chicken is cooked through.
  5. Once cooked, remove from grill and chop skewers into bite-sized pieces. Toss with greens or salad base.
