  • 1 medium onion, chopped
  • 2 cups enchilada sauce
  • 6 corn tortillas
  • 2 cups shredded Monterey Jack and Cheddar cheese blend
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef with chopped onion until no pink remains.
  3. Stir in cumin, chili powder, and black beans; cook for an additional minute until fragrant.
  4. In a greased baking dish, layer half of the beef mixture, followed by three tortillas, half of the enchilada sauce, and a generous layer of cheese. Repeat the layers.
  5. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
  6. Let cool slightly before slicing and garnish with fresh cilantro if desired.
