Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 tsp freshly cracked black pepper
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 2 bell peppers, sliced (mixed colors for appeal)
  • 2 green onions, chopped (for garnish)
  • 1 inch fresh ginger, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup chicken broth

Instructions

  1. Prepare your ingredients: Dice chicken into bite-sized pieces, mince garlic and ginger, and slice bell peppers.
  2. Marinate the chicken: In a bowl, combine diced chicken with soy sauce, cornstarch mixture, minced garlic, ginger, and half of the black pepper. Allow to marinate for at least 15 minutes.
  3. Sauté the chicken: Heat vegetable oil in a large skillet over medium-high heat. Cook marinated chicken until golden brown (about 5-7 minutes), stirring occasionally.
  4. Add vegetables: Toss in bell peppers and remaining black pepper; stir-fry for about 3-4 minutes until peppers soften.
  5. Create the sauce: Whisk together chicken broth with any leftover marinade and pour into the skillet while stirring until thickened (around 2-3 minutes).
  6. Serve hot: Garnish with chopped green onions and enjoy over rice or noodles.
