Instructions
- In a medium saucepan, whisk together milk and sugar over medium heat until steaming. In a separate bowl, combine egg yolks and cornstarch. Gradually pour hot milk into the egg mixture to temper, then return everything to the saucepan.
- Cook over medium heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat, stir in vanilla and butter, then chill for at least 30 minutes.
- Preheat oven according to croissant dough instructions (typically 375°F or 190°C). Roll out croissant dough and cut into triangles. Place chilled pastry cream at the base of each triangle, roll tightly from point to tip.
- Bake according to package instructions until golden brown. Melt chocolate chips and butter together; drizzle over cooled croissants before serving.
