  • 2 cups whole milk
  • ½ cup granulated sugar
  • 6 egg yolks
  • 2 tsp vanilla extract
  • ¼ cup cornstarch
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter

Instructions

  1. In a medium saucepan, whisk together milk and sugar over medium heat until steaming. In a separate bowl, combine egg yolks and cornstarch. Gradually pour hot milk into the egg mixture to temper, then return everything to the saucepan.
  2. Cook over medium heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat, stir in vanilla and butter, then chill for at least 30 minutes.
  3. Preheat oven according to croissant dough instructions (typically 375°F or 190°C). Roll out croissant dough and cut into triangles. Place chilled pastry cream at the base of each triangle, roll tightly from point to tip.
  4. Bake according to package instructions until golden brown. Melt chocolate chips and butter together; drizzle over cooled croissants before serving.
