  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 8 oz fusilli or penne pasta
  • 1 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the chicken and mincing the garlic.
  2. Boil salted water in a large pot, cook pasta according to package instructions until al dente.
  3. In a skillet over medium heat, warm olive oil. Cook seasoned chicken until golden brown (6-8 minutes).

  5. Stir in cherry tomatoes and basil, cooking just until tomatoes soften.
  6. Drain pasta (reserve some water) and combine with the skillet mixture. Add reserved pasta water if needed for creaminess.
